Kate Downham has been growing, preserving, and cooking real food since 2007. She is the author of four books on homestead skills: A Year in an Off-Grid Kitchen, Natural Small Batch Cheesemaking, Backyard Dairy Goats, and Sourdough Without Fail.

Living off-grid with her family of nine in the Tasmanian forest, Kate milks her own goats, makes all their cheese, mills all her own grain, and bakes fresh sourdough bread daily. She has been writing at The Nourishing Hearthfire blog since 2016, where she shares her family’s homestead successes, failures, recipes, and how-to guides.

“One of the things I love about this book is that Kate manages to gear it toward both beginning and experienced cheesemakers. The first several chapters cover the concepts and fundamentals of making cheese. Don’t miss these! Even if you’ve been making cheese for years and years, these chapters are loaded with many, many tidbits plus practical wisdom. I’ve been making cheese for the past decade, but I learned more useful information from Kate’s book than I have anywhere else.

The recipes are very well written; easy to understand and easy to follow. Once you’re comfortable with the recipe, there are “quick-glance method for experienced cheesemakers” in the chapter margins. Very handy! The appendices include an extensive troubleshooting section and how to adapt ingredients to larger quantities of milk. I’ve now tried a few different books on natural cheesemaking, and this one is by far the best. The author doesn’t just list steps for you to do – she actually explains why each step is necessary, and what will happen if you do it differently. I’ve learned more about cheesemaking from reading a couple of her simplest recipes than I have from reading entire books from other authors. She also makes cheesemaking more approachable than anyone else I’ve read – she uses natural, easy-to-make starters, instead of industrially-produced cultures, and gives recipes that fit the milk production of a small homestead (and the busy life of a small homesteader). Cheesemaking feels much more flexible and forgiving after reading this book, and simultaneously, I have a much more precise understanding of why and how things are happening. I highly recommend this book to anyone wanting to get into natural cheesemaking!!
